Ingredients

  • 2 T. olive oil
  • 1 lb. ground turkey
  • 1 tsp. minced garlic
  • 1/2 c. diced onions
  • 1/2 c. yellow pepper, diced
  • 1 1/2 c. sweet potato, diced
  • salt & pepper
  • pinch of red chili flakes– optional
  • 1/2 c. shredded mozzarella
  • 1 can black beans, rinsed
  • mushrooms– optional

Directions

  1. In large skillet, heat oil over medium heat. Add the ground turkey and garlic. After about 5 minutes, add the onions, peppers and sweet potato. Season with chili flakes, salt and pepper. Mix in beans and mushrooms. Cover the skillet and cook entire mixture until all vegetables are tender, stirring frequently. Add water or oil if necessary.
  2. While this is cooking, preheat oven to 450.
  3. Sprinkle mozzarella over entire mixture and put in oven until cheese melts. Garnish with parsley.
